A delicious side dish that's a great way to quickly use up some extra cucumbers. This dish is especially good with potato salad, grilled Boca burgers and other summertime favorites.
score each of the cucumbers lengthwise along each side with a fork
cut off the ends of the cucumbers and discard
slice the cucumbers into thin disks (around 1/8th inch in thickness)
place the cucumbers in a medium mixing bowl
salt and pepper the cucumbers
chop the green onions and add them to the cucumbers
make a sugar/vinegar solution that is 2 parts sugar for every 1 part vinegar. Make sure that you only use apple cider vinegar for this recipe - not white vinegar.
pour the sugar/vinegar solution into the bowl enough to cover the cucumbers
chill overnight
enjoy chilled right out of the fridge.
