Zucchini Pie

Ingredients

2 cups zucchini, unpeeled and sliced

1 medium onion, chopped

1 cup cheddar cheese, grated

1/3 cup olive oil,

1 cup Bisquick baking mix,

4 eggs, beaten

1 teaspoon salt,

1/2 teaspoon pepper,

3 - 4 tbsp parsley,

Equipment

9" pie pan

Directions

Step 1

Mix all ingredients together and pour into greased 9" pie pan.

Step 2

Bake at 350 degrees for 35-40 minutes. Let cool 15 minutes, and enjoy!
