This recipe was invented to please my pasta-loving husband. It makes an excellent lunch or summer dinner entree.
Cook the pasta according to package instructions for al dente, or firm to the bite.
Drain and rinse pasta in cold water to halt cooking process. Set aside to cool.
Mix next 6 salad ingredients in a large bowl, stirring gently. Add cooled pasta. Stir and set aside.
Combine mayonnaise, vinegar, garlic and anchovies in the bowl of a food processor or blender. Blend until smooth.
Add fresh basil to dressing and pulse several times to blend basil.
Add to salad mixture and stir gently to coat all ingredients with dressing.
Serve immediately or refrigerate.
