This recipe is modified from the Cook's Bible to have more vegetables. It's a big hit!
Heat the olive oil in the pan. Once warm add the leek and garlic for 5 minutes. Then add the rice and coat, cook for 30 seconds, stirring constantly.
Stir in the carrot and celery. Add the liquids and simmer for 15 minutes with lid. Remove from heat for 10 minutes. Serve when meal is ready.
