A light tasty soup which makes a quick and satisfying dinner.
Saute onion in oil
Add spinach, and cook until it is contimue until limp (about 8 minutes)
Stir in rice, water, salt and pepper. SImmer until rice is ready (about 10-25 minutes)
Remove pot from heat, stir in yogurt and garlic, reheat carefully- don't boil or the yogurt will curdle
