Shrimp on a stick, with a nice marinade sauce.
For the marinade, grate the ginger and mix with the garlic, leeks, salt, lime juice, soy sauce and rice wine. Mix in a shallow bowl.
Split shrimp shells down the back, but leave attached. Devein if necessary. Add to the marinade, and mix. Cover and refrigerate for at least 1/2 hour.
Preheat the broiler to medium. Thread three shrimp per skewer. Broil for 2 minutes on each side or until the shrimp are pink and cooked through. Serve and enjoy.
