Banana bread made with soy milk

Step 1

Preheat oven to 350 degrees F

Step 2

Cream margarine and brown sugar.

Step 3

Beat in egg.

Step 4

Sift together flour, soda and salt.

Step 5

Combine bananas, soy milk and lemon juice.

Step 6

Add the dry ingredients into the butter mixture -- alternating with the bananas. Stir just enough to combine. DO NOT OVER-MIX!

Step 7

Turn out into an oiled and floured loaf pan.

Step 8

Bake 50-60 minutes or until done.

Step 9

Cool in pan for 10 minutes, then turn out onto cooling rack.
