Our take on a wonderful dish we had at Gloria Estefan's Bongos restaurant in Orlando, Florida
Brown the turkey in the saucepan and set the turkey aside.
Add the oil to the empty saucepan and sweat the onions.
Return the turkey to the saucepan and add all of the remaining ingredients EXCEPT for the olives.
Simmer for 20-35 minutes (until all the liquid has been absorbed, the peppers are soft, and the flavors have combined).
Garnish with green olives. Serve with Yellow Cuban Rice.
