We enjoy these for breakfast or on the side of dinner. They are crunchy and a delicious way to use up extra mashed potatoes.
Mix together all ingredients in the mixing bowl.
Melt 1 tbsp of butter in the pan on medium to medium low heat.
Add the 2 inch diameter (flat) potato cakes to the pan and cook for 10 minutes on each side, until golden brown. Add additional butter as needed for subsequent batches.
