Combine all ingredients (except for oil, cheese and dressing) in a bowl. Cover and chill batter for 15 minutes.
Heat oil to 350 in a stock pot over medium heat.
Stuff a cube of cheese into 1 tbsp batter. Fry in oil in batches until brown, crisp, and cooked through, 3-4 minutes, turning often; drain on paper towels. Serve with dressing for dipping.
