Laura's favorite lunch of rice and beans.

Step 1

Chop the leeks. Put olive on saucepan and cook the leeks until tender.

Step 2

Add rice, and make sure olive oil coats the rice, cool until slightly toasted.

Step 3

Add can of beans and 2 cups of water. Add salt and pepper and bacon. Simmer with lid until rice is cooked, about 30-40 minutes.
