This is a great recipe for indian spinach curry, or saag paneer. We have tried many, this one is our favorite so far.

Step 1

Heat the Ghee on medium high heat in the saute pan. It will smell like movie popcorn and melt like oil. It's awesome.

Step 2

Saute the leek until soft.

Step 3

Add the garam masala, garlic, pepper and ginger. Saute for 2-3 minutes.

Step 4

Add the tomatoes, and saute for 5-10 minutes until the water mostly evaporates.

Step 5

Add the pulsed spinach from the food processor. Saute for 5 minutes until the juice is out.

Step 6

Remove from heat. Slowly add the yogurt an oz at a time. Then mix in the salt and paneer last. Cook for 10 minutes, and serve.
