Combine the garlic, ginger, red pepper flakes in a bowl. Combine the soy sauce and vinegar in another

Heat skillet to medium high heat, and add the peanut oil. Add the leek and cook for 3 minutes, or until bright green. Add the cabbage, cook for 4 minutes.

Add the sauce and spices, mix for 1 minute.

Remove from heat, add sesame seeds, serve on udon noodles.
