Wonderfully moist muffins with lots of flavor.
Preheat oven to 350 degrees. Place the cupcake liners in the muffin pans.
Whisk the dry ingredients (first 7) together in one mixing bowl. Whisk the wet ingredients (last 5) together in another bowl. Add the wet ingredients to the dry and whisk until just combined.
Scoop the batter (using the tablespoon) into the muffin cups to bake for 19 minutes.
Let the muffins cool for 5-10 minutes in the muffin pans and then remove from the pan.
Sugared topping: Melt 6 tbsp butter in a small container. Mix 1 cup sugar and 1 tsp cinnamon in a small bowl. Brush the muffin tops with melted butter and roll in the cinnamon sugar to coat well.
