Creamy Tomato Lasagna Florentine

A great way to enjoy lasagna without ricotta.

Step 1

Preheat oven to 350 degrees. Heat olive oil in a skillet. Add spinach and stir until barely wilted. Add garlic powder, stir, remove from heat and set aside.

Step 2

Blend cottage cheese in food processor until smooth. Mix with eggs, oregano, Italian seasoning, and 1/2 cup of Parmesan cheese. Stir in spinach and set aside.

Step 3

Spray 9x13 baking dish with nonstick spray and spread a few spponfuls of sauce around the bottom of the pan. Arrange 3 noodles, top with 1 cup sauce, 1 cup creamy spinach mixture and 3/4 cup Mozzarella cheese. Repeat for three complete layers. Top it all off with last three lasagna noodles, 1 cup sauce and 1 cup Mozzarella cheese. Add remaining Parmesan on top, cover with greased foil and bake for 40 minutes.

Step 4

Remove foil and bake for 10 minutes to allow cheese to brown (or turn on the broiler). remove from oven and let stand for 15 minutes before serving.
