A yummy soft taco dish.
Preheat oven to 400 degrees F. Line baking tray with silpat.
Add cauliflower, chickpeas, potatoes, bell pepper to a large bowl and mix with barbeque sauce. Mix dried spices in a small container. Pour barbeque mixture onto silpat and sprinkle dried spices on top.
Bake for 40-50 minutes until veggies are tender.
Toast tortillas. Add barbeque mixture to each tortilla, topped with avacado, ranch dressing, cilantro and lime juice.
