Pepitas Pesto Pasta

Ingredients
  

  • 3 cloves garlic
  • 1/4 cup pepitas pumpkin seeds ,
  • 1/2 teaspoon salt
  • 2 cups basil leaves fresh and packed
  • 1/4 cup olive oil
  • 1/2 package linguini

Equipment

  • Food Processor
  • Large Pasta Pot

Method
 

  1. In large pasta pot, boil water and cook the linguini for ~10 minutes. Drain in colander, retain a little pasta water, and replace pasta in pot.
  2. While pasta is cooking, combine garlic, pepitas, salt, basil leaves, and olive oil in food processor, and process into a smooth paste. Toss with pasta in pot, makes 4 servings. Enjoy with dolmas, hummus and pita.
