Sweet & Sour Cucumbers

A delicious side dish that's a great way to quickly use up some extra cucumbers. This dish is especially good with potato salad, grilled Boca burgers and other summertime favorites.

Ingredients
  

  • 2 or 3 medium cucumbers rinsed
  • 1 or 2 green onions rinsed
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • sugar
  • apple cider vinegar

Equipment

  • fork
  • Sharp knife
  • Medium mixing bowl

Method
 

  1. score each of the cucumbers lengthwise along each side with a fork
  2. cut off the ends of the cucumbers and discard
  3. slice the cucumbers into thin disks (around 1/8th inch in thickness)
  4. place the cucumbers in a medium mixing bowl
  5. salt and pepper the cucumbers
  6. chop the green onions and add them to the cucumbers
  7. make a sugar/vinegar solution that is 2 parts sugar for every 1 part vinegar. Make sure that you only use apple cider vinegar for this recipe - not white vinegar.
  8. pour the sugar/vinegar solution into the bowl enough to cover the cucumbers
  9. chill overnight
  10. enjoy chilled right out of the fridge.
