Frog's Eye Salad

These little pastas float in a whipped topping and pineapple juice mixture and taste great!

Ingredients
  

  • 1/2 box Acini Pepe Pasta (8 oz)
  • 1 egg
  • 1/2 cup sugar
  • 1 tablespoon flour
  • 1 15 oz jar pineapple chunks (drain and save juice)
  • 1 11 oz can mandarin oranges
  • 1 cup mini marshmallows
  • 8 oz cool whip

Equipment

  • medium cooking pot
  • large sauce pan

Method
 

  1. Cook pasta in medium pot. Drain and rinse with cold water.
  2. In a sauce pan, whisk the egg, sugar, flour and reserved pineapple juice. Cook until mixture thickens, then cool.
  3. Add remaining ingredients and the pasta to the thickened mixture. Chill and scarf it up!
