Creamy Tomato Lasagna Florentine

A great way to enjoy lasagna without ricotta.

Ingredients
  

  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 4 cups spinach fresh
  • 2 cups cottage cheese
  • 1 tsp oregano dried
  • 1 tsp Italian seasoning
  • 1 cup Parmesan cheese
  • 4 cups tomato sauce
  • 12 oven ready lasagna noodles no-boil
  • 3 cups mozzarella cheese shredded

  • Skillet
  • 9x13 baking dish
  • Baking Spray

Method
 

  1. Preheat oven to 350 degrees. Heat olive oil in a skillet. Add spinach and stir until barely wilted. Add garlic powder, stir, remove from heat and set aside.
  2. Blend cottage cheese in food processor until smooth. Mix with eggs, oregano, Italian seasoning, and 1/2 cup of Parmesan cheese. Stir in spinach and set aside.
  3. Spray 9x13 baking dish with nonstick spray and spread a few spponfuls of sauce around the bottom of the pan. Arrange 3 noodles, top with 1 cup sauce, 1 cup creamy spinach mixture and 3/4 cup Mozzarella cheese. Repeat for three complete layers. Top it all off with last three lasagna noodles, 1 cup sauce and 1 cup Mozzarella cheese. Add remaining Parmesan on top, cover with greased foil and bake for 40 minutes.
  4. Remove foil and bake for 10 minutes to allow cheese to brown (or turn on the broiler). remove from oven and let stand for 15 minutes before serving.
