Chicken and Dumpling soup

A nice creamy soup for the chicken and dumpling craving.

Ingredients
  

  • 3 tbsp unsalted butter
  • 2 potatoes diced
  • 1 leek diced
  • 1/2 tsp garlic ground
  • 1 tsp rosemary dried, ground
  • 1/2 tsp thyme dried, ground
  • 1 tsp mushroom umami dired, ground
  • salt and pepper
  • 3 tbsp all purpose flour
  • 4 c vegi stock
  • 1 c sour cream
  • 16 oz pasta or gnocchi ,
  • 1 bag quorn cubes

Equipment

  • Pot for boiling pasta
  • Stirring spoon

Method
 

  1. In large pot, melt butter. Add leeks, garlic, potatoes, rosemary, thyme and mushroom umami. Season with salt and pepper. Simmer for 5 minutes
  2. Sprinkle sauce with flour. Stir and cook for 2 minutes. Stir in stock and sour cream. Bring to boil over high heat.
  3. Stir in pasta, reduce heat to medium and cook pasta until tender (can add precooked pasta and not cook as long). Season to taste with salt and pepper.
