Laura's Rice and Beans

Laura's favorite lunch of rice and beans.

Ingredients
  

  • 1 medium leek chopped
  • 1 cup rice
  • 1 can field peas (no green beans or bacon)
  • 1/2 package fake bacon sliced
  • salt and pepper to taste
  • 2 Tbsp olive oil
  • 2 cups water

Equipment

  • medium saucepan

Method
 

  1. Chop the leeks. Put olive on saucepan and cook the leeks until tender.
  2. Add rice, and make sure olive oil coats the rice, cool until slightly toasted.
  3. Add can of beans and 2 cups of water. Add salt and pepper and bacon. Simmer with lid until rice is cooked, about 30-40 minutes.
