Ingredients
  

  • 2 Cups Spanish or other short-grain rice ,
  • 2 Tbsp Olive Oil
  • 1 Tsp Paprika
  • 1 Tsp Cumin
  • 1 Pinch Saffron
  • 1 Pinch Salt
  • 4 Cups Water Chicken Stock, or Shrimp Stock ,
  • Fresh parsley minced

Equipment

  • Large Saucepan

Method
 

  1. Bring the water (or stock) and the saffron (if using) to a boil in the saucepan.
  2. Add remaining ingredients and reduce heat to low.
  3. Simmer for 20-25 minutes, or until all the liquid has been absorbed.
  4. Garnish with parsley.
