Risotto alla Milanese

Ingredients
  

  • 1/2 tsp garlic powder
  • 1 tsp saffron
  • 2 tsp butter
  • 1 1/2 cups arborio rice
  • 4 cups vegetable stock
  • 1/4 cup Parmesan cheese shredded

Equipment

  • medium nonstick saucepan

Method
 

  1. Put the saffron in a small bowl with 1 tsp of warm water. Let stand for 10 minutes.
  2. Melt the butter in the sauce pan on medium heat. Add the rice and stir for 2 minutes until translucent. Add the saffron and 2 1/2 cups of stock. Stir frequently.
  3. Continue adding stock as absorbed, season with garlic powder, salt and pepper. Top with Parmesan.
