Braised Fennel

Ingredients
  

  • 2 bulbs fennel sliced into 6 wedges
  • seeds from two cardamom pods crushed
  • 1/8 tsp ground mace or hot dry mustard ,
  • salt and pepper to taste
  • 1.5 cups chicken broth
  • 1/4 cup shallots (green onions leeks, or onions ,
  • 3 tbsp butter

Method
 

  1. Saute shallots, cardamom and other spices in melted butter. Make sure to use a pan which is oven safe and had a lid.
  2. Add the fennel and turn it to coat in the butter mixture
  3. Add chicken broth, bring to a boil
  4. Place in oven for 30 minutes, basting occaisionally
  5. Return to stovetop and return to a boil, about 15 minutes until thick.
