Chicken Curry Salad

A quick twist on regular chicken salad.

Ingredients
  

  • 1 medium apple diced
  • 1 tablespoon lemon juice
  • 4 boneless chicken breasts
  • 3 teaspoons curry powder
  • 1 1/2 cups mayonaise
  • 1 box raisins

Equipment

  • Frying Pan

Method
 

  1. Boil the chicken breasts in water in the frying pan until cooked through. Cool.
  2. Dice the chicken, then mix with apple, lemon juice, curry powder, mayonaise and raisins. Add enough curry powder to suit your taste.
  3. Serve on bread or with crackers for a quick snack.
