Chinese Vegetable Noodle Soup

This delicious light soup is amazingly filling.

Ingredients
  

  • 5 c chicken stock
  • 1 tbsp sesame oil
  • 1 tsp ground ginger
  • 1 tbsp soy sauce
  • 1 carrot peeled, thinly sliced on the bias
  • 1/2 c snow peas sliced width-wise
  • 1/4 c small cauliflower pieces
  • 1/4 c broccoli chopped
  • 1/2 c mushrooms sliced
  • 6 oz rice noodles in 3 inch pieces

Equipment

  • large stock pot

Method
 

  1. Combine stock, sesame oil, ginger and soy sauce in the stock pot and bring to a boil.
  2. add the vegetables and noodles and simmer for about 10 minutes (until noodles are tender). Serve and enjoy!
