Ingredients
  

  • 6 eggs hard-cooked
  • 5 oz tofu extra-firm
  • 1.5 tbsp yellow mustard
  • 1 tsp Vegenaise
  • Paprika

Equipment

  • Spoonula

  • Tofu press

Method
 

  1. Remove shells from eggs. Slice eggs in half length-wise; rinse and remove yolks and discard.
  2. Press extra water out of tofu. Place tofu in food processor with mustard and Vegenaise. Process until smooth.
  3. Place tofu mixture in ziplock bag, remove the tip to pipe into the egg halves. Sprinkle with paprika and serve chilled.
