Garlic Yogurt Spinach Soup

A light tasty soup which makes a quick and satisfying dinner.

Ingredients
  

  • 3 Tbsp Oil
  • 1 onion
  • 2 lbs. approx. spinach or swiss chard ,washed, stemmed and torn
  • 1/2 cup white rice (substituting brown rice doesn't work)
  • 1 quart water or veggie broth (veggie broth makes it creamier)
  • 2 cups plain yogurt
  • 1-2 tsp garlic minced
  • salt and pepper to taste

Method
 

  1. Saute onion in oil
  2. Add spinach, and cook until it is contimue until limp (about 8 minutes)
  3. Stir in rice, water, salt and pepper. SImmer until rice is ready (about 10-25 minutes)
  4. Remove pot from heat, stir in yogurt and garlic, reheat carefully- don't boil or the yogurt will curdle
