Hummus

Adapted from Cook's Illustrated and the Brownhollands.

Ingredients
  

  • 1 can garbanzo beans rinsed and microwaved
  • 3 TB lemon juice
  • 1/4 cup water possibly more
  • 6 TB tahini
  • 3 TB extra-virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cumin
  • 1/2 tsp cayenne
  • 1/2 tsp garlic powder
  • 1/2 tsp chipolte tobasco sauce

Method
 

  1. Rinse the garbanzo beans at least three times. Microwave to heat and dry them. Add to food processor, and pulse until ground.
  2. Add the rest of the ingredients, liquids first and mix, then spices and salt, until smooth and creamy. Add more olive oil and water as needed.
