Jumbo Shrimp Skewers

Shrimp on a stick, with a nice marinade sauce.

Ingredients
  

  • 12 jumbo shrimp in shells
  • 1 inch fresh gingerroot
  • 3 cloves garlic crushed
  • 1/2 inch leek finely chopped
  • pinch salt
  • 1 tbsp lime juice
  • 1 tbsp soy sauce
  • 2 tbsp rice wine

  • broiler

Method
 

  1. For the marinade, grate the ginger and mix with the garlic, leeks, salt, lime juice, soy sauce and rice wine. Mix in a shallow bowl.
  2. Split shrimp shells down the back, but leave attached. Devein if necessary. Add to the marinade, and mix. Cover and refrigerate for at least 1/2 hour.
  3. Preheat the broiler to medium. Thread three shrimp per skewer. Broil for 2 minutes on each side or until the shrimp are pink and cooked through. Serve and enjoy.
