Latkes

We enjoy these for breakfast or on the side of dinner. They are crunchy and a delicious way to use up extra mashed potatoes.

Ingredients
  

  • 4 cups mashed potatoes
  • 1/2 cup leeks minced
  • 4 egg whites
  • 1 cup flour
  • 4 tbsp unsalted butter

Equipment

  • Mixing Bowl
  • saute pan

Method
 

  1. Mix together all ingredients in the mixing bowl.
  2. Melt 1 tbsp of butter in the pan on medium to medium low heat.
  3. Add the 2 inch diameter (flat) potato cakes to the pan and cook for 10 minutes on each side, until golden brown. Add additional butter as needed for subsequent batches.
