Vegetarian Moo Shu with sauce

Ingredients
  

  • 1 tofu
  • 1 batch sauce
  • 2 tbsp peanut oil
  • 2 eggs
  • 8 oz mushrooms thinly sliced
  • 1/2 tsp garlic powder
  • 1 bag coleslaw (14-ounce bag)
  • 1/2 c leeks diced
  • 12 flour tortillas
  • 1/2 c hoisin sauce
  • 1/4 c rice vinegar
  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tsp toasted sesame oil
  • 1/4 tsp black pepper ground

Method
 

  1. Dice and cook tofu in pan; set aside.
  2. Heat 1 tbsp oil in skillet, cook eggs. Thinly slice and set aside to cool.
  3. Mix the sauce by combining hoisin, vinegar, oyster and soy sauces and sesame oil.
  4. Heat 1 tbsp oil in skillet, saute mushrooms, add coleslaw and leeks. Cook till softened. Add tofu and 1/2 of the sauce. Season with pepper.
  5. Serve with flour tortillas and drizzle with remaining sauce.
