Oatmeal-Cookie Chews

Ingredients
  

  • 1 cup butter or margarine room temperature ,
  • 1 cup cup packed brown sugar
  • 1 cup granualted sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 3 eggs
  • 2-1/2 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 cups rolled oats
  • 1 cup raisins
  • 1/2 cup choppoed walnut

Method
 

  1. In a large bowl, beat together butter or margarine, brown sugar, 1 cup granulated sugar, vanilla and salt until light and fluffy.
  2. Add eggs, one at a time, beating well after each addition.
  3. Add flour and baking soda, beating until throughly blended.
  4. Stir in oats, raisins and and walnuts, if desired.
  5. Refrigerate dough 1 to 2 hours for easier handling.
  6. To bake cookies, preheat oven to 350 F (175C).
  7. Shape dough into 1-1/2 inch balls. Roll in 1/3 cup of granulated sugar, coating completely.
  8. Place 3 inches apart on ungreased baking sheets, flatten slightly with bottom of a glass.
