Reuben Hush Puppies

What a treat! These amazingly flavorful hush puppies are the perfect appetizer or side dish to spice up any meal!

Ingredients
  

  • 1 c corn beef cooked and diced
  • 1 c rye bread crumbs
  • 1/2 c sauerkraut squeezed to drain, minced
  • 1/2 c dill pickle diced
  • 1/2 c whole or 2% milk
  • 1/4 c yellow cornmeal
  • 1/4 c leek diced
  • 1 egg
  • 2 tbsp sauerkraut juice or dill pickle juice
  • 2 tsp baking powder
  • 2 tsp dry mustard ground
  • 1/2 tsp kosher salt
  • 1/2 tsp sugar
  • 1/4 tsp baking soda
  • peanut or vegetable oil 3 inches deep in stock pot
  • 24 swiss cheese cubes
  • thousand island dressing

Equipment

  • stock pot
  • plate lined with paper towels
  • metal scooper
  • Bowl
  • tbsp

Method
 

  1. Combine all ingredients (except for oil, cheese and dressing) in a bowl. Cover and chill batter for 15 minutes.
  2. Heat oil to 350 in a stock pot over medium heat.
  3. Stuff a cube of cheese into 1 tbsp batter. Fry in oil in batches until brown, crisp, and cooked through, 3-4 minutes, turning often; drain on paper towels. Serve with dressing for dipping.
