Sourdough Cinnamon Crumb Cake

Ingredients
  

  • 2 c all-purpose flour
  • 1 c sugar
  • 1.5 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp vanilla extract
  • 12 tbsp unsalted butter melted
  • 8 tbsp unsalted butter room temerature
  • 1 c sugar
  • 2 eggs
  • 1 tbsp vanilla extract
  • 1 c sourdough started unfed/discard
  • 2 c all-purpose flour
  • 1 tbsp Potato flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 c milk at room temperature

Method
 

  1. Topping (use first 6 ingredients): In a medium bowl, whisk flour, sugar, cinnamon and salt together. Add vanilla extract and melted butter into flour mixture, stirring until everything is uniformly moist.
  2. Batter: In a large mixing bowl, beat butter and sugar until well combined. Add eggs, vanilla, and starter and mixing until smooth.
  3. In a medium bowl, whisk together the flour, potato flour, baking soda, salt, and baking powder. Stir into the butter/starter mixture. Add the milk and mix until smooth.
  4. Spread the batter in the prepared pan. Sprinkle the crumb mixture evenly over the top.
  5. Bake cake for 45 minutes until a paring knife inserted in the center comes out clean. Remove from the oven and cool on a rack.
