Tex-Mex Pasta Salad

Ingredients
  

  • 1 pound radiatore pasta cooked
  • 2 tbsp olive oil
  • 1/2 tsp garlic dried
  • 1 package Ground meat crumbles
  • 2/3 cup water
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1 cup Mexican blend cheese shredded
  • 1 cup grape or roma tomatoes ,diced
  • 1/2 cup bell pepper diced
  • 1/2 cup black olives sliced
  • 1.5 cup black beans cooked
  • 2 tbsp lime juice
  • 1/2 tsp salt
  • 4 oz sour cream

Equipment

  • Skillet
  • Pan (to cook pasta)
  • Small bowl

Method
 

  1. Cook and drain the pasta.
  2. Cook meat grounds, olive oil, salt, cumin, chili powder, garlic, and water. Add bell pepper and cook. Set aside to cool.
  3. Combine sour cream and lime juice in a separate small bowl.
  4. Combine all ingredients together. Serve warm or cold.
