Vegetable Pilaf

Mixed vegetables with rice

Ingredients
  

  • 1 cup basmati rice
  • 2 tsp vegetable oil
  • 1/2 tsp cumin seed
  • 2 bay leaf
  • 4 green cardamom pods
  • 4 cloves ,
  • 1 leek chopped
  • 1 carrot diced
  • 1/3 cup peas frozen
  • 1/3 cup corn
  • 1/4 tsp ground cumin
  • salt to taste

  • medium nonstick skillet

Method
 

  1. Wash the rice in cold water, let soak 30 min.
  2. Heat the oil in frying pan, saute cumin seeds for 2 minutes. Add bay leaves, cardamom, cloves to saute for 2 minutes.
  3. Add diced leeks, cook for 5 minutes. Stir in carrots, cook 3-4 minutes.
  4. Drain the rice, add to pan, add peas and corn, cook for 5 minutes. Add 2 cup water, ground cumin, and salt. Boil covered for 15 min for low heat. Let stand covered 10 min before serving.
