Ingredients
  

  • 2 cups zucchini unpeeled and sliced
  • 1 medium onion chopped
  • 1 cup cheddar cheese grated
  • 1/3 cup olive oil
  • 1 cup Bisquick baking mix
  • 4 eggs beaten
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 - 4 tbsp parsley

Equipment

  • 9" pie pan

Method
 

  1. Mix all ingredients together and pour into greased 9" pie pan.
  2. Bake at 350 degrees for 35-40 minutes. Let cool 15 minutes, and enjoy!
